Faktor yang Mempengaruhi Penggunaan Daging Sapi impor Pada Cost di Hotel Grand Dafam Ancol Jakarta

The objective of this study is to find out interest of processed beef menu according to customers and to analyse factors affecting purchase of beef by Hotel Grand Dafam Ancol Jakarta. This study used qualitative research method, so the data collection was carried out by interview to the resource person related to the use of imported beef. The resource persons determined are Sous Chef at Hotel Grand Dafam Ancol, Commis Chef who processed the foodstuff for serving, Cost Controller who planned and arranged the product stock every month at Hotel Grand Dafam Ancol, and information who is obligatory from academic of business study program. The result of study and interview identified that the factors of use of imported beef at food cost are quality of beef and the price of beef. The obstacles in the use of imported beef are delay delivery and high price. Whereas, solving of delay delivery is storing stock and the high price is solved by making price comparison with another vendor to get the best priceReferences
